Ingredients
For the Cake:
– 2 ½ cups all-purpose flour (315g)
– 2 ½ tsp baking powder
– ½ tsp baking soda
– ½ tsp salt
– 1 cup unsalted butter, softened (227g)
– 1 ½ cups granulated sugar (300g)
– 4 large eggs
– Zest of 2 oranges
– 2 tsp vanilla extract
– ¾ cup fresh orange juice (180ml)
– ½ cup sour cream or plain yogurt (120ml)
– 1 cup fresh or dried cranberries (100g)
For the Glaze:
– 1 cup powdered sugar (120g)
– 2–3 tbsp fresh orange juice
– 1 tsp orange zest
– ¼ cup whole cranberries (optional, for garnish)
Instructions
Step 1: Preheat the Oven and Prepare the Pan
Start by preheating your oven to 350°F (175°C)—grease and flour a 9-inch bundt pan or a loaf pan to prevent sticking.
Step 2: Make the Batter
Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. In a bowl, cream the softened butter and granulated sugar until it’s light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the fresh orange zest and vanilla extract.
In a separate bowl, combine the orange juice and sour cream (or yogurt). Gradually add the dry ingredients to the butter mixture, alternating with the orange juice mixture, and be sure to start and finish with the dry ingredients. Finally, gently fold in the cranberries.
Step 3: Bake the Cake
Pour the batter into your prepared pan and smooth out the top. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Step 4: Prepare the Glaze
While the cake is cooling, whisk together the powdered sugar, fresh orange juice, and orange zest in a small bowl until it’s smooth. If you need a thinner consistency, feel free to add a bit more orange juice.
Step 5: Glaze the Cake
Once the cake is completely cool, drizzle the glaze over the top evenly. For a festive touch, you can add whole cranberries and a sprinkle of orange zest as garnish.
Tips for Success
– For an extra moist cake, brush a little orange juice over it while it’s still warm.
– Want a spiced twist? Try adding a pinch of cinnamon or nutmeg to the batter.
– For a beautiful presentation, consider topping with sugared cranberries and orange slices.
Enjoy this delightful cake and share it with family and friends during the holiday season!
