How to Make Authentic Hyderabadi Biryani

Hyderabadi Biryani is a delicious and aromatic rice dish that brings together marinated meat and fragrant basmati rice. Here’s a step-by-step guide to help you create this classic dish.

Ingredients

For the Marination:
– 500g chicken (bone-in, cut into medium pieces)
– 1 cup thick yogurt
– 1 tablespoon ginger-garlic paste
– 2 tablespoons lemon juice
– 2 green chilies, finely chopped
– 1/2 teaspoon turmeric powder
– 1 tablespoon red chili powder
– 1 teaspoon garam masala powder
– 1 tablespoon coriander powder
– Salt to taste
– Fresh coriander leaves, chopped
– Fresh mint leaves, chopped
– 1/4 cup fried onions

For the Rice:
– 2 cups basmati rice (soaked for 30 minutes)
– 4-5 whole spices (cloves, cardamom, cinnamon, bay leaf)
– 1 teaspoon shahi jeera (caraway seeds)
– Salt to taste

For Assembly:
– 1/4 cup ghee
– Saffron strands soaked in 1/4 cup warm milk
– Additional fried onions
– Fresh mint and coriander leaves
– 1 teaspoon kewra water (optional)

Steps to Prepare

1. Marinate the Chicken:
– In a large bowl, combine all the marination ingredients.
– Add the chicken pieces and coat them thoroughly with the marinade.
– Cover the bowl and let the chicken marinate for 1-2 hours (overnight works best for more flavor).

2. Cook the Rice:
– In a pot, bring water to a boil, adding salt, whole spices, and shahi jeera.
– Add the soaked rice and cook until it’s about 70% done (the grains should still be firm).
– Drain the rice and set it aside.

3. Layer the Biryani:
– In a heavy-bottomed pot or biryani handi, layer the marinated chicken at the bottom.
– Spread the half-cooked rice over the chicken.
– Drizzle the saffron milk and ghee on top, and sprinkle with fried onions, mint, and coriander.
– If you have enough components, you can repeat the layering process.

4. Seal and Cook (Dum Cooking):
– Cover the pot tightly with a lid. If possible, seal the edges with dough to trap the steam.
– Cook on high heat for 5 minutes, then lower the flame to cook on dum for 25-30 minutes.
– Alternatively, place the pot on a tawa (griddle) to avoid direct heat and cook for the same duration.

5. Serve:
– Once done, gently mix the biryani to combine the flavors without breaking the rice.
– Serve hot, accompanied by raita, salad, or boiled eggs for a complete meal.
